Frito Chili Pie
3 cups Fritos brand corn chips
1 large onion, chopped
1 19 ounce can of chili (such as Dennisons or Nalley’s)
1 cup grated cheese
Place 2 cups of the fritos in a 9 by 13 inch baking dish. Sprinkle the onions and half of the cheese over the chips. Pour the chili over the mixture. Top with remaining cheese and fritos. Bake at 350 degrees for 20 minutes.
Serving suggestion: Typically, I use shredded cheddar, but I recently found a good four cheese Mexican blend that works very well.
Beverage suggestion: goes well with a really good beer.
